Roasted Garlic Soup

Classic Residence by Hyatt in Pompano Beach
Serves 4


Ingredients:

  • 1 cup fresh garlic—cloves, cleaned and peeled
  • 3 cups fat-free chicken broth
  • 2 ounces extra virgin olive oil
  • 2 tablespoons lemon juice
  • 4 ounces French bread

Directions:

  1. Preheat oven to 250°F.
  2. Toss garlic cloves in olive oil and spread on sheet pan.
  3. Cover pan with aluminum foil.
  4. Bake until garlic is soft, about 25 minutes.
  5. Bring chicken stock to a boil; add bread.
  6. Let bread simmer 5 minutes, then add garlic, oil and lemon juice.
  7. Purée mixture until smooth.
  8. Ladle into four hot bowls and serve immediately.
