Chocolate Chocolate Chip Brownies

Ingredients:

  • 1-1/4 cups unsweetened applesauce
  • 2-1/2 cups sugar
  • 2 teaspoons vanilla extract
  • 2 ounces eggs—beaten
  • 2 ounces egg whites—lightly beaten
  • 1-1/2 cups all-purpose flour
  • 1 cup unsweetened cocoa
  • 3/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350 degrees.
  2. Spoon applesauce into a fine sieve over a bowl. Let stand 15 minutes. Discard liquid.
  3. Scrape drained applesauce into a large bowl.
  4. Add sugar, vanilla, eggs and egg whites; stir well.
  5. Lightly spoon flour into dry measuring cups and level with a knife.
  6. Combine flour, cocoa and salt, stirring well with a whisk.
  7. Add to applesauce mixture; stir just until moist.
  8. Fold in baking chips.
  9. Spoon batter into a 13 x 9 inch baking pan coated with cooking spray.
  10. Bake for 35 minutes. Check and adjust if needed.
  11. Cool on a wire rack.
