Beet and Pistachio Gazpacho
Beet and Pistachio Gazpacho

Classic Residence by Hyatt in Aventura
Serves 6
Ingredients:
1 pound beets
4 ounces red onion
1 bunch green onions
4 slices whole wheat bread crumbs—dry
2 tablespoons vinaigrette—rosemary
1/2 cup olive oil
6 ounces pistachio nuts—chopped
pinch salt
pinch pepper
6 teaspoons sour cream
Directions:
Combine all ingredients in a food processor and blend until smooth.
Season with salt and pepper to taste.
Serve in chilled bowls garnished with 1 teaspoon sour cream.
