Wild Rice Stuffed Mushrooms

Serves 5


Ingredients:

  • 1 tablespoon garlic—minced
  • 1 ounce olive oil
  • 2 each scallions—sliced
  • 1/2 cup cooked wild rice—cooled
  • 1/2 cup cream cheese—softened
  • 1/4 cup pecans—chopped
  • 10 each mushroom caps—washed and patted dry

Directions:

  1. Sauté garlic in olive oil, add scallions, cook until tender, cool.
  2. In a mixing bowl, combine all ingredients except mushroom caps.
  3. Fill each mushroom cap with mixture, place in oven proof dish, cover with foil.
  4. Bake at 350°F for 20 minutes or until heated throughout.
  5. Serve immediately.
