Soba Noodles with Duck

Serves 8


Ingredients:

  • 5 ounces soba noodles
  • 1/4 cup carrot—julienne
  • 1/4 cup zucchini—julienne
  • 1/2 pound duck meat without skin—sliced
  • 1/2 ounce scallion—minced water

ORIENTAL DRESSING:

  • 1/2 cup lime juice
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup sesame oil
  • 1 tablespoon ginger root—minced
  • 1 tablespoon honey

Directions:

  1. Mix all ingredients. 
  2. Bring water to boil, add soba noodles and cook until they are al dente, about 10–15 minutes. Cool noodles.
  3. Mix soba noodles with the carrot and zucchini and toss with the Oriental dressing.
  4. Fan the duck meat on top of the salad.
  5. Serve on Napa cabbage leaves and garnish with minced scallions.
