Roasted Mission Figs Wrapped in Prosciutto |

Serves 4

|
Ingredients:
- 1/2 cup balsamic vinegar
- 1/2 cup molasses
- 12 each figs—large, fresh mission figs
- 1 ounce feta cheese—cut in 12 squares
- 1 ounce prosciutto—thin sliced
Directions:
- In a small, heavy sauce pan, bring vinegar and molasses to a boil.
- Reduce to a simmer.
- Cook until mixture is reduced by 2/3, about 15 minutes. Cool.
- Preheat oven to 350°F.
- Using a small knife, slit each fig at the bottom.
- Stuff with one piece of feta cheese.
- Carefully wrap each fig in one slice prosciutto.
- Bake 10 minutes or until prosciutto is crisp.
- Place 3 figs in the center of each plate and spoon balsamic reduction on and around each of the figs.
