Roasted Mission Figs Wrapped in Prosciutto

Serves 4


Ingredients:

  • 1/2 cup balsamic vinegar
  • 1/2 cup molasses
  • 12 each figs—large, fresh mission figs
  • 1 ounce feta cheese—cut in 12 squares
  • 1 ounce prosciutto—thin sliced

Directions:

  1. In a small, heavy sauce pan, bring vinegar and molasses to a boil.
  2. Reduce to a simmer.
  3. Cook until mixture is reduced by 2/3, about 15 minutes. Cool.
  4. Preheat oven to 350°F.
  5. Using a small knife, slit each fig at the bottom.
  6. Stuff with one piece of feta cheese.
  7. Carefully wrap each fig in one slice prosciutto.
  8. Bake 10 minutes or until prosciutto is crisp.
  9. Place 3 figs in the center of each plate and spoon balsamic reduction on and around each of the figs.
