Pompano Poached Pears

Classic Residence by Hyatt in Pompano Beach
Serves 4


Ingredients:

  • 9 ounces sugar
  • 1-1/2 cups water
  • 1 cup red wine
  • 1 each vanilla bean—split
  • 1 each cinnamon stick
  • 4 each pears—peeled Anjou
  • 1 tablespoon ground cinnamon

Directions:

  1. In a large saucepan, combine sugar, water, red wine, vanilla and cinnamon stick.
  2. Bring mixture to a boil, then immediately reduce to a simmer.
  3. Place pears in liquid and poach until tender, about 35 minutes.
  4. Remove pears from liquid and cool.
  5. Continue cooking liquid until it has reduced by half.
  6. Strain and cool mixture.
  7. Slice pears vertically from the bottom, leaving the top intact.
  8. Fan out pear in the center of each serving plate.
  9. Spoon cooking liquor around.
  10. Garnish with ground cinnamon.
