Pompano Poached Pears |

Classic Residence by Hyatt in Pompano Beach
Serves 4
|
|
Ingredients:
- 9 ounces sugar
- 1-1/2 cups water
- 1 cup red wine
- 1 each vanilla bean—split
- 1 each cinnamon stick
- 4 each pears—peeled Anjou
- 1 tablespoon ground cinnamon
Directions:
- In a large saucepan, combine sugar, water, red wine, vanilla and cinnamon stick.
- Bring mixture to a boil, then immediately reduce to a simmer.
- Place pears in liquid and poach until tender, about 35 minutes.
- Remove pears from liquid and cool.
- Continue cooking liquid until it has reduced by half.
- Strain and cool mixture.
- Slice pears vertically from the bottom, leaving the top intact.
- Fan out pear in the center of each serving plate.
- Spoon cooking liquor around.
- Garnish with ground cinnamon.
