Ingredients:

  • 6 cups heavy cream
  • 3/4 cup passion fruit—fresh
  • 18 large egg yolks
  • 1-1/4 cups sugar
  • 1/4 cup brown sugar

Directions:

  2. Whisk egg yolks, passion fruit and sugar together.
  3. Slowly whisk in cream and blend until smooth and well mixed.
  4. Place 12 individual crème brûlée dishes in a large baking pan in the oven.
  5. Carefully pour about 5-6 oz of mixture into each dish.
  6. Pour enough hot water in the baking pan to come about 3/4 inches up to the sides of the dishes.

  8. Remove dishes from the water bath and cool completely.
  9. Cover each with plastic and refrigerate until ready to serve.
  10. Before serving, spread 1 teaspoon brown sugar on each and glaze the crème brûlée with a handheld propane torch.
