Papaya Chutney

Ingredients:

  • 3 tablespoons ginger root—minced
  • 1 cup red onion—diced small
  • 4 tablespoons brown sugar
  • 1 teaspoon curry powder
  • 1 teaspoon cumin powder
  • 1 cup vinegar
  • Pinch salt—to taste
  • 3 tablespoons honey
  • 8 cups papaya—diced small
  • 1/2 cup green onion—sliced

Directions:

  1. Place ginger root and red onion in a saucepan.
  2. Add sugar, curry powder, cumin, vinegar, salt and honey.
  3. Cook over low heat for about 15 minutes. Add papaya and cook on high heat until chutney thickens.
  4. Cool down and mix in green onions.
  5. Serve slightly warm.
