Pacific Rim Honey-Barbecued Salmon

Ingredients:

  • 16 ounces honey
  • 6 ounces lime juice
  • 6 ounces low-sodium soy sauce
  • 6 ounces hoisin sauce
  • 1/4 cup garlic—minced
  • 2 tablespoons hot pepper sauce
  • 2 tablespoons fresh ginger—minced
  • 60 ounces salmon fillets—cut into 6-oz fillets (about 4 lb total meat)

Directions:

  1. Cut salmon into 6-oz fillets.
  2. Combine remaining ingredients in a small bowl.
  3. Dip each salmon fillet in seasoning, coating each side well.
  4. Grill salmon on medium heat on both sides.
  5. Serve immediately.
