Crustless Veggie Quiche

Classic Residence by Hyatt in Chevy Chase
Serves 6


Ingredients:

  • 1/4 cup onion—chopped
  • 3/4 cup broccoli—chopped
  • 1/2 cup peppers—chopped
  • 1/2 cup mushrooms—chopped
  • 1 cup Swiss cheese—grated
  • 6 each eggs
  • 1-1/2 cups light cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 tablespoon rosemary
  • 1/2 tablespoon thyme
  • 1/2 tablespoon tarragon
  • pinch nutmeg
  • pinch garlic powder
  • 1/4 cup parmesan cheese

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray an 8-inch pie pan with non-stick cooking spray.
  3. Layer veggies plus Swiss cheese in the dish halfway to the top.
  4. Liberally beat eggs, cream and spices together.
  5. Pour over veggies and cheese.
  6. Bake for 30 minutes.
  7. Remove from the oven and sprinkle with parmesan cheese.
  8. Return to the oven for 15 minutes.
  9. Serve.
