Crustless Veggie Quiche |

Classic Residence by Hyatt in Chevy Chase
Serves 6
|
|
Ingredients:
- 1/4 cup onion—chopped
- 3/4 cup broccoli—chopped
- 1/2 cup peppers—chopped
- 1/2 cup mushrooms—chopped
- 1 cup Swiss cheese—grated
- 6 each eggs
- 1-1/2 cups light cream
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 tablespoon rosemary
- 1/2 tablespoon thyme
- 1/2 tablespoon tarragon
- pinch nutmeg
- pinch garlic powder
- 1/4 cup parmesan cheese
Directions:
- Preheat oven to 350 degrees.
- Spray an 8-inch pie pan with non-stick cooking spray.
- Layer veggies plus Swiss cheese in the dish halfway to the top.
- Liberally beat eggs, cream and spices together.
- Pour over veggies and cheese.
- Bake for 30 minutes.
- Remove from the oven and sprinkle with parmesan cheese.
- Return to the oven for 15 minutes.
- Serve.
