Chopped Vegetable Salad with Lemon

Ingredients:

  • 1 each red bell pepper—diced
  • 1 each green bell pepper—diced
  • 1 each yellow bell pepper—diced
  • 1 each carrot—diced
  • 1 each cucumber—peeled and diced
  • 1 tablespoon garlic—minced
  • 1 teaspoon fresh dill—chopped
  • 1 tablespoon fresh mint—chopped
  • 1 tablespoon fresh cilantro—chopped
  • 2/3 cup olive oil
  • 1/4 cup lemon juice
  • 1 each scallion
  • salt and black pepper to taste
  • 8 each lettuce leaves

Directions:

  1. Mix all ingredients together well, chill, serve on a lettuce leaf.
