Chilled Sweet Potato Soup

Ingredients:

  • 1 tablespoon garlic—minced
  • 1/2 cup celery—diced
  • 1/2 cup onion—diced
  • 1/2 cup leeks—diced
  • 2 quarts low sodium chicken broth
  • 1-1/2 pounds sweet potatoes—peeled and chopped
  • 1 teaspoon cinnamon
  • 1/2 tablespoon nutmeg
  • 2 ounces maple syrup
  • 1 teaspoon salt
  • 5 ounces evaporated skim milk
  • 1/4 cup currants
  • 1/4 cup sliced almonds—toasted
  • 1 cup heavy cream—whipped

Directions:

  1. Sauté garlic, celery, onions and leeks in a small amount of chicken broth until tender.
  2. Add potatoes, cinnamon, nutmeg and remaining broth.
  3. Simmer until potatoes are tender. Purée and chill.
  4. Just before serving add maple syrup, salt and milk.
  5. Mix well.
  6. Garnish each serving with currants, almonds and whipped cream.
