Chilled Sweet Potato Soup |

Serves 10

|
Ingredients:
- 1 tablespoon garlic—minced
- 1/2 cup celery—diced
- 1/2 cup onion—diced
- 1/2 cup leeks—diced
- 2 quarts low sodium chicken broth
- 1-1/2 pounds sweet potatoes—peeled and chopped
- 1 teaspoon cinnamon
- 1/2 tablespoon nutmeg
- 2 ounces maple syrup
- 1 teaspoon salt
- 5 ounces evaporated skim milk
- 1/4 cup currants
- 1/4 cup sliced almonds—toasted
- 1 cup heavy cream—whipped
Directions:
- Sauté garlic, celery, onions and leeks in a small amount of chicken broth until tender.
- Add potatoes, cinnamon, nutmeg and remaining broth.
- Simmer until potatoes are tender. Purée and chill.
- Just before serving add maple syrup, salt and milk.
- Mix well.
- Garnish each serving with currants, almonds and whipped cream.
