Beet and Pistachio Gazpacho

Serves 6


Ingredients:

  • 1 pound beets
  • 4 ounces red onion
  • 1 bunch green onions
  • 4 slices whole wheat bread crumbs—dry
  • 2 tablespoons vinaigrette—rosemary
  • 1/2 cup olive oil
  • 6 ounces pistachio nuts—chopped
  • pinch salt
  • pinch pepper
  • 6 teaspoons sour cream

Directions:

  1. Combine all ingredients in a food processor and blend until smooth.
  2. Season with salt and pepper to taste.
  3. Serve in chilled bowls garnished with 1 teaspoon sour cream.
