For the first time in the company’s 20+ year history, residents at Classic Residence by Hyatt, a national leader in luxury senior living, will now have the opportunity to experience signature wines selected exclusively for their fine dining experience. The company’s premium private label wine program was developed in partnership with The Culinary Institute of America (CIA) and includes a 2005 barrel-fermented chardonnay and a 2004 private reserve cabernet sauvignon produced by Windsor Vineyards™ under the Greystone Cellars™ label. Collectively, both wines have won 14 awards in prestigious wine competitions.
The premium proprietary wines are now available at 14 of the company’s 18 operating communities. The exclusive award-winning wines were selected by a panel of experts including certified master chefs and wine studies faculty at The Culinary Institute of America at Greystone and a team of Classic Residence by Hyatt food and beverage experts. The wine will feature an original label designed just for Classic Residence by Hyatt communities, featuring information about a joint scholarship fund with The Culinary Institute of America.
As part of the expanded collaboration between Classic Residence by Hyatt and The Culinary Institute of America, one dollar from each bottle sold will be contributed to a scholarship fund for continuing education culinary students called the Classic Residence by Hyatt Accelerated Culinary Arts Certificate Program (ACAP) Endowed Scholarship Fund. One student per year will get the opportunity to attend the program, providing recent bachelor’s degree graduates in hospitality, food science and nutrition with valuable continuing educations culinary skills to help enrich and advance their careers.
Classic Residence by Hyatt executive chefs are also creating special menu items to pair with the wines to help residents explore the subtle tasting notes of the chardonnay and cabernet sauvignon. Prospective residents will be invited to wine tasting events throughout spring 2008.
The premium house wine program is a natural extension of the company’s hospitality heritage and commitment to providing each of its residents with an exceptional dining experience every day—one plate at a time. “We are constantly building on the restaurant-quality dining experience we offer at Classic Residence by Hyatt,” said Don Clawson, assistant vice president of food and beverage, Classic Residence by Hyatt. “The exclusive premium wine program is another example of how our residents continue to reap the benefits of our working relationship with The Culinary Institute of America.”
At the core of its commitment to dining innovation, Classic Residence by Hyatt has engaged The Culinary Institute of America to help chefs develop the newest in healthy menu options inspired by international cuisine. The company’s chefs have all received customized training provided by The Culinary Institute of America on nutrition, healthy cooking and baking techniques, flavor dynamics and food and wine pairing.
